Locavore: April 28- May 4 Shopping and Menu

Spring has sprung in Eastern Idaho and here are the local goodies we have found this week!

Rexburg Farmers Market- Onions as big as melons, and hydroponic tomatoes grown at BYUI
Idaho Falls Farmers Market- Lettuce, spinach, garlic chives, garlic, colorful fresh eggs, tiny red potatoes, and hand made chorizo sausage and flour tortillas
G's Dairy- mozzarella cheese, milk and Reed's Dairy ice cream!
And pounds of asparagus courtesy of the ditch banks in Rigby!




Sunday- Smashed red potatoes and ribboned asparagus with a light vinaigrette- easy meal, blanch asparagus and slice into ribbons. Boil halved red potatoes; when soft pan fry with butter, salt, and pepper, smashing a little as they crisp. Top asparagus with vinaigrette and serve.
Monday- Palak Daal - Indian lentils and spinach adjusted to fit our needs
Tuesday- Chorizo and black bean quesadillas with homemade salsa
Wednesday- Spinach, red potato, and asparagus pizza with a salad
Thursday- Italian sausage and bean soup (-pasta, +spinach), and bread
Friday- Leftovers!/ Whatever I want to cook
